Apple Crumble Cupcakes

Today I'm sharing a recipe with you for my Apple Crumble Cupcakes - it combines two delicious things.... cupcakes and apple crumble. SHOCKING. How could you ever have guessed that's where the idea came from.....

Firstly, you'll need to make 12 cupcakes. Follow my Victoria Sponge Recipe  using just 2 eggs. Cook them for about 20 mins in an oven at 160c/Gas Mark 6, remembering to rotate the tray halfway through.

Next you'll need to make the crumble topping. You'll need 25g caster sugar, 50g plain flour and 25g butter. Rub this together with you fingers until in forms a crumb. Put in in a dish or on a baking tray in the oven for about 15 mins at the same temperature as the cakes. Then break everything up using a fork or a spoon. If it doesn't seem crunchy enough, put it back in the oven for a few minutes.

Next, make the apple filling. Peel, core and chop two cooking apples into equal sized cubes. Put them in a pan with 2 tablespoons of caster sugar and a little water. You can also add a sprinkling of cinnamon if you like. Put the pan on a high heat and stir the mixture so it doesn't stick. Cook the apples until they are soft but still holding their shape then leave everything to the side to cool down.

While everything cools, you can make the icing. You just want to make a basic buttercream icing which you can find here.

Once everything is cooled, cut a hole in the middle of each cupcake about 2cm wide and deep. Put the apple filling in the hole, then cover the cupcake in icing. You can pipe or spread, it doesn't really matter. Then simply dip the iced cupcake into the crumble so that it sticks to the icing.

And there you have it, dessert in a cupcake!!
