Butternut Squash with Goats' Cheese
This is a very rich side dish but is super easy to make yet very impressive! Try and get the soft goats cheese that comes in a longer cylinder, normally in a wee plastic case. Most of the supermarkets stock this now. Also, this recipe calls for sage and you can use fresh or dried. I normally use dried because its just as nice.
Ingredients
1 large butternut squash, peeled and chopped into equal sized chunks approx. 3cm square.
Olive oil
Salt and pepper
Sage
125g goats cheese
1. Pre-heat your oven to 160c/Gas Mark 7 while you prep the butternut squash.
2. Once peeled and chopped, place the butternut squash on a roasting tray and drizzle with a little olive oil. Season well with salt and pepper and sprinkle a little sage over the top. Roast in the oven for 35-45 minutes or until the squash is soft.
3. Leave the oven on and transfer the squash to an ovenproof serving dish. Dice up the goats cheese and spread evenly across the squash. Return to the oven for 5 minutes to heat the cheese.
